Mayo-Q: IoT solution for real-time quality assessment of mayonnaise production

Mayo-Q is an innovative digital quality assurance system developed by AOTECH in collaboration with Cidacos, one of Spain’s leading food manufacturers. By combining smart AONIR sensors, IoT technologies, and blockchain reporting, the project brings real-time visibility and traceability to mayonnaise production, ensuring every batch meets quality expectations while reducing waste and increasing process efficiency.

In the food industry, quality control is often based on random sampling and delayed lab results—leaving little room for immediate correction. Cidacos faced this challenge in its mayonnaise production, particularly around maintaining the required 65% fat content. Any deviations risked reprocessing, waste, or customer dissatisfaction.

Mayo-Q set out to solve this by providing continuous, real-time measurement of fat content and production conditions—allowing the company to act immediately when issues arise and document quality with full transparency.

Mayo-Q introduced a fully automated system that constantly monitors the quality of every batch of mayonnaise.
